Carrot Cake Overnight Oats

Makes 6 servings

INGREDIENTS

  • 31 oz Vanilla Overnight Oats Base
  • 3.3 oz carrot- small shreds
  • 2.2 oz raisins
  • 1.5 oz walnuts- chopped small pieces
  • 1.1 fluid oz /  little >1/8 cup orange juice
  • 1/2 tablespoon cinnamon
  • 1/4  tsp salt, or more to taste
  • Chopped fresh pineapple, for garnish

INSTRUCTIONS

  1. In a bowl combine base, carrot shreds, walnuts, raisins, orange juice, cinnamon and salt
  2. Stir well until thoroughly mixed
  3. Place into container and seal well. Refrigerate
  4. Garnish with chopped pineapple

Vanilla Base

INGREDIENTS

  • 24 fluid oz / 3 cups Almond Breeze unsweetened Almond Milk  
  • 24 oz Vanilla Blossom Reveri
  • ¼ cup / 1 scoop Lifetime Vanilla whey protein powder
  • 3/16 tsp salt
  • 13 oz rolled oats
  •  
  • INSTRUCTIONS
  1. Combine almond milk, Vanilla Reveri, protein powder and salt in blender and blend until well mixed
  2. Pour mixture into container
  3. Add oats to mixture and stir until well mixed.  Seal container
  4. Refrigerate overnight
